- 12 oz noodles
- ½ large white onion, chopped
- 1 lb. ground beef
- 2 Tbs taco seasoning
- 15 oz diced tomatoes
- 1 ½ cup shredded cheddar and Monterey jack cheese
- Cook pasta. Drain, reserving 1 cup pasta water.
- In large skillet over medium heat, heat oil. Add onion and season with salt. Cook 5 min.
- Add ground beef and cook, then add taco seasoning. Drain.
- Add diced tomatoes and ¼ cup pasta water. Add cheese and let melt. Add cooked pasta and mix.
