Taco Pasta

Serves 4-6

Ingredients

  • 12 oz noodles
  • ½ large white onion, chopped
  • Salt
  • 1 lb. ground beef
  • 2 Tbs taco seasoning
  • 15 oz diced tomatoes
  • 1 ½ cup shredded cheddar and Monterey jack cheese

Instructions

  1. Cook pasta. Drain, reserving 1 cup pasta water.
  2. In large skillet over medium heat, heat oil. Add onion and season with salt. Cook 5 min.
  3. Add ground beef and cook, then add taco seasoning. Drain.
  4. Add diced tomatoes and ¼ cup pasta water. Add cheese and let melt. Add cooked pasta and mix.
